Salad: Tabouleh

This salad suitable for diabetic person, which was taken from a diabetic cookbook with some modifications.
Tabouleh salad

Ingredients:

(A)
1 large tomato (without seed)
1 or 2 shallots
1 pepper (without seed)
1 bunch parsley
salt to taste

(B)
1 tsp balsamic vinegarette or olive oil
2 stone wheat thins crackers
half fresh lime (squeeze)

Equipments: cheese-cloth. chopper or food processor or your hands.
Note: DO NOT substitute the Vinegarette with normal Vinegar if not available

Methods:
  1. Cut and clean ingredients (A).
  2. Chopped coarsely ingredient (A) except the parsley.
  3. Scoop up the chopped ingredients from step 2.
  4. Then chopped parsley coarsely, and scooped it into the same bowl into the earlier mixture.
  5. Add salt to taste to the chopped mixture and tossed them gently.
  6. Soak the crackers for 5 to 10 minutes. Then dry the soaked crackers using the cheesecloth by squeezing it until the soaked crackers are dry
  7. Then tossed the dry cracker into the mixture gently, and add the squeezed lime as well as the oil into the same bowl.
  8. Marinate the salad for half hour before serving.
This salad taste delicious by itself or with rice or casserole dish.
