Simple MIx Salad


Ingredients:

1 pack of pre-cut vege salad
feta cheese to taste
Diced tomato
diced avocado
salted wheat sticks (optional)
Calamadtas Olives (optional)

Methods:

1) Add the vege about 1 handful.
2) Add a handful of diced tomatoes and avocados
3) Sprinkle the feta cheese
4) Continue with the layering as above until the veges are all gone.
5) Now it's ready for you to eat the salad..

Pizza Night


It's the pizza night. I bought the pizza crust last week, and decided to use it yesterday and today. It' so crusty and delished indeed!!.. All I did was to use the spagetti sauce, vegetarian of course, and I added peppers and turkey strips and cheese. Only one type of cheese I used here: Cheddar..

Baked it at 450F for 10 minutes and wella... One delicious pizza for din din coming up!!

Modified Mac & Cheese


Ingredients:

1 can cream of mushroom
1.5 cups of Almond Milk or any milk
2 tbsp unsalted butter
1 handful ground beef
1 shallot sliced thinly
1 small bell pepper diced
2 tbsp flour
2 cups of pasta
1 tbsp olive oil (for pasta)
salt and pepper to taste
2 cups cheese (try mix 3 different types of cheese)
(blue cheese, cheddar cheese, monterey jack)
(here I use cheddar and nigela cheese)
casserole dish or any oven proof dish
breadcrumbs

Breadcrumbs:

3 slices of bread (tear them)
fresh or package basil or parsley


Method:

1) Saute the beef with the sliced onions. Sprinkle peppers and salt to taste.



2) Boil the milk plus the cream of mushroom into a pot.
Stir them gently until it boils or almost boil.

3) Put the butter into another hot pot until it melted and add 2 tbsp of flour.
Stir gently until it becomes like a rue.


4) Add the boil milk into the rue and gently stir
to prevent clumping.

5) Let it boil or almost boil and stir gently for a few minutes.
Add cheeses into the milk mixture pot. Stir gently.

6) Add pasta and saute beef into the cooked milk mixture.



7) Pour the cooked mac and cheese into a casserole dish.
Top it with homemade breadcrumbs..


Oven: 375F
Timer: 15-20 minutes or until golden brown.

Avocado Salad

This is a simple salad as a side dish.

Ingredients:

Artisan Salad (buy @ WalMart) or any salad
Cut 1 ripe Avocado
Light Ken's Honey Dijon vinegarette
Balsamic Vinegarette
Handful diced cucumber (optional)
crushed roasted peanuts (optional)

Methods:

Add everything into a bowl and mix them well.
Don't forget to wash your salad first!!
Thats it!!!

Isn't that so simple!!
You can add sliced boiled eggs if you so wish..

Banana Chocolate Chips Cornbread

The basic recipe for this is here..
Therefore, am not going to rewrite it again..

The only change I made for the filling are as follows:

Sliced one banana
a handful of chocolate chips

Place all of the banana and the chips on the first layer
of the dough.. in replace of the blueberries..


Unbake Cornbread


Baked banana chocolate chip cornbread

I sprinkle powdered sugar on top of the baked
cornbread..

Personally, am not a believer on sugar free
that is using splenda or any other as such on my baked cakes etc..
The reason being that splenda is not good for our health..
as I found out..

So I rather use normal sugar in moderation..
Most of my baked cakes and cookies
are not as sweet as laid out on the original recipe..
as I modify them to suit my taste..
I always cut my sugar down..

Pasta Casserole


Before Bake

 Baked this a few days ago.
It's a simple casserole dish..
If you don't know what to cook tonight,
go to your kitchen cabinet.. and
stare and look at the things you've got there..

That's what I did a few days ago..

Good staple food to have in your freezer and cabinet:
Condensed Cream of Mushroom
Condensed Cream of Celery
Meat (ground beef, chicken etc)
Mozarella Cheese
Cheddar Cheese
Coconut milk
vegetables
onions
ginger
garlic
peppers
salt
etc..

If you have all these in your cabinet,
you can surely whipped out some interesting food..

Baked Salmon..

This is an easy fish dinner I made
a few days ago.. (can't remember the date)


Oven: 400F
Time: 30 minutes (covered)

Ingredients:

celery flower
onions
brussel sprouts (optional)
1 tsbp of salad mix (see recipe here)

marinate sauce:

Balsamic Vinegarette
Honey d'jon mustard vinegarette
Kraft Honey style

Can use any kind of vinegarette or salad dressings for marinate.
It just so happened that I have all these dressings in my fridge

Blackberry-Date Cornmeal Cake

.. hmm .. yummmssss.. Blackberry.. sound like that smartphone Blackberry..., but this one.. I can sure eat it!!

Anyway, the recipe is adapted from bon appetit by Huckleberry Bakery and Cafe.., so I don't think am going to rewrite the recipe here although I modify some of the ingredients to fit my taste and what is available in my kitchen cabinet and the fridge. If you have any question, please don't hesitate to leave a message... ;)


My Baking Timer: 1 hour
Cooling Timer: 10 minutes

This cake is great for morning breakfast or as a coffee cake.. Enjoy!! Hope you try the recipe.. and be creative.. because cooking and baking are an art.. so art not always perfect...

MOTN: Quinoa & salad

I'd a long day today... 
Anyway, as am too exhausted, I decided to cook quinoa.. which is an easy cheezy.. unlike cooking rice.. quinoa only takes like 6 minutes to cook..


How to cook quinoa?
--> 1 cup of quinoa = 2 cups water...

Thats the only thing you need to know and cook it for 5 minutes until the grains are fluffy!!

Quinoa comes in two color:
here, I mix both colors (inca red and inca normal). I think they do have black ones too..

I like my food to be colorful.. Somehow, if my food is not colorful and interesting.. I kind of not interested in eating.. hence, my food has to be colorful.. ;)

Then I saw this salad (bleow) while I was at Walmart a few days ago.. They look so awesome and fresh that I decided to give it a try.. Indeed, they are fresh salad.. At the same time, I bought a bunch of mixed-red roses.. I love roses.. *wink wink*.. and the person who bought that pink roses at the corner too.. Love it!!

MOTN: Flavored Turkey Dinner

First, I marinated my Turkey overnight as shown below with spices and Almond milk. YES!! Almond milk... Well, you can use any kind of milk you like but I preferred Almond milk..

The next day: I transferred the marinated turkey into another crockpot liner. I laid celery at the bottom acting like a bridge and I scooped the broth that I made or the liquid from marinating the turkey about 1 cup into the crockpot liner as shown below.. Then I put the marinated turkey, rearranged them properly in the crockpot's line. I set the timer on high for an hour or two. Then I set the timer on low for 8 hours. Wella, the turkey is ready at the end of the day. It is indeed very very moist and flavorful!!

Now, the moment has come for me to reveal my dinner plate.. *drumroll*.. I wish I've a companion to eat this dinner with today.. Unfortunately, he's on the other side of the world.. :(

Mini Pot-pie


I decided to turn leftover cream soup into mini potpie for me. I like to turn most leftover into something interesting that I can eat rather than throwing them away if they have not turn bad yet. I bought the mini pot pie pans from Harris Teteer, and decided that I could make the potpie for lunch tomorrow to bring to work.

What I did to the leftover? I added beef to the cream soup so that my pie has that meaty taste and would taste like a pie rather than plain soup.. lol

Spagetti Soup

What to do if you have leftover soup? Make it into spagetti soup!!! ... Yes, I had this chicken soup leftover today, no more meat in it, so I decided to add beef cubes and cooked the soup with the beef until the beef is tender. Once tender, I added more spices like the chilli paste to give it a little bit of hotness, and I added a dash of Mrs. Dash and black pepper, and two stalks of chard. I tear the chard and dumped it into the boiling soup.. Wella...


Isn't that look delicious??!! Sometimes, when you have leftovers at home, one has to decide to either throw it away or being creative and make it into something different, but taste really delish..


This was my dinner early today with sourdough bread that my bf bought a week ago. I refrigerated it, and it still good to be eaten today.. Slowly, most of the breads are about gone.. I also added taboule for dinner.. For cold days, it's good to eat hot soup.. :)

Dinner Tonight


What to do if you have so many bread in the fridge.. I've normal bread, sourdough bread, and pita bread and wheat bread.. All of them I put in the fridge to make it last longer after their due date!!.. Why so many breads.. well, my boyfriend bought 2 different types of bread and I bought two different types too.. So it's like raining bread at home!!..

Anyway, slowly but surely the bread started to be gone.. I find a way to make the bread delicious to my taste... This was my dinner a few hours ago.. Pita bread with baked beans & salad.. Then I top it off with beef casserole.. yummmsss!!

I wish my boyfriend is here.. He would enjoy these meal.. and I won't be eating all alone.. :(

Anyway, the casserole was easy peezy to make.. The recipe for making the casserole is in my blog.. Just substitute the cream of mushroom with celery condensed soup and add uncooked ground beef. I didn't cook the beef because it will be cooked in the oven..

Well, it was very  very delicious!!! Yummms...

Honey Buns..

I made honey buns yesterday night using wheat flour. It turned out great and sweet of course.. I used nutella as the filling and I sprinkled chopped almonds on top of the spread. I didn't make a proper video of it.. I wish I did, but this was a spur of the moment thing. I want to see how it turns out.

Oven temp: 375F for 50 minutes!

However, I made a short choppy clips on how I made this. I'll update it later in the future for a much better videos..

Honey buns


I didn't use any sugar in making this buns.. Am using honey..



The syrup that I pour on top of this buns was an orange flavoured syrup I made a year ago. I bought the orange flavored water from the mediterranean store. The actual recipe can be found here.

I didn't follow her filling recipe because I don't have the ingredients. My filling recipe:

1) One bottle of nutella
2) chopped almonds

Orzo Casserole

Today, I decided to use my leftover soup where the only thing left in my soup is just the soup or broth. So I added cut up beef to make the soup taste slightly better as a base for my casserole!


Ingredients:

1 cup Orzo
Leftover soup
handful spagetti
Soffrito or any spices (optional)
pepper & salt to taste
Beef cubes
1 can cream of mushroom

Pan: casserole dish
Oven: 375F for 30 minutes



Methods:

1) Boil the leftover soup and add a little more water and add salt and pepper to taste.
2) Add beef cubes for taste
3) Once boiled, add spagetti and orzo until the pasta open up.
4) Finally, add cream of mushroom at simmer
5) Simmer for awhile until the water evaporated a little.
6) Transferred the cooked mixture into casserole dish. If you have cheese, sprinkle it now.
7) Then baked for about 30 to 35 minutes.
8) Once baked, put aside for 5 minutes to cool..

Asian Style Mac & Cheese

Casserole Again!!!

This time I made it with ground beef. Oven at 375F degrees. Baked it at 40 minutes covered with aluminium foil.. The method to bake this is similar to tuna fish casserole, therefore, I reckon I don't really need to put up the recipe here again!!...

It's a delicious meal. I ate it with homemade coleslaw and mediterranean olives. I just bought the ready made sliced coleslaw at the commissary and just add peppers and mayo (it can be sandwich ones).

Quinoa

Ever heard of quinoa??? It's my meal tonight.. It's a healthy meal which when cook looks like barley but it's a grain full of proteins. Quinoa is great if you tend to have migraine or headaches and it's the food of the incas.

Later in the future, I'll make a video on how to cook quinoa. If you find that rice is too heavy a meal try eating quinoa.. It's very light and has a nutty taste. I tried eating quinoa yesterday with vege balls soup and fried eggs.. and salad.. It's yummy and delicious..

Hope y'all give quinoa a try. You can find quinoa at any wholefood market or health food market. Happy healthy eating!!!
