Banana Chocolate Chips Cornbread

The basic recipe for this is here..
Therefore, am not going to rewrite it again..

The only change I made for the filling are as follows:

Sliced one banana
a handful of chocolate chips

Place all of the banana and the chips on the first layer
of the dough.. in replace of the blueberries..


Unbake Cornbread


Baked banana chocolate chip cornbread

I sprinkle powdered sugar on top of the baked
cornbread..

Personally, am not a believer on sugar free
that is using splenda or any other as such on my baked cakes etc..
The reason being that splenda is not good for our health..
as I found out..

So I rather use normal sugar in moderation..
Most of my baked cakes and cookies
are not as sweet as laid out on the original recipe..
as I modify them to suit my taste..
I always cut my sugar down..

Blackberry-Date Cornmeal Cake

.. hmm .. yummmssss.. Blackberry.. sound like that smartphone Blackberry..., but this one.. I can sure eat it!!

Anyway, the recipe is adapted from bon appetit by Huckleberry Bakery and Cafe.., so I don't think am going to rewrite the recipe here although I modify some of the ingredients to fit my taste and what is available in my kitchen cabinet and the fridge. If you have any question, please don't hesitate to leave a message... ;)


My Baking Timer: 1 hour
Cooling Timer: 10 minutes

This cake is great for morning breakfast or as a coffee cake.. Enjoy!! Hope you try the recipe.. and be creative.. because cooking and baking are an art.. so art not always perfect...

Honey Buns..

I made honey buns yesterday night using wheat flour. It turned out great and sweet of course.. I used nutella as the filling and I sprinkled chopped almonds on top of the spread. I didn't make a proper video of it.. I wish I did, but this was a spur of the moment thing. I want to see how it turns out.

Oven temp: 375F for 50 minutes!

However, I made a short choppy clips on how I made this. I'll update it later in the future for a much better videos..

Honey buns


I didn't use any sugar in making this buns.. Am using honey..



The syrup that I pour on top of this buns was an orange flavoured syrup I made a year ago. I bought the orange flavored water from the mediterranean store. The actual recipe can be found here.

I didn't follow her filling recipe because I don't have the ingredients. My filling recipe:

1) One bottle of nutella
2) chopped almonds

Homemade Swiss Roll..

I know that I've put this up a couple of months ago, but I didn't really give the recipe on how to make it.. The reason being that the recipe belongs to my Aunt, and it's not to be distributed. Therefore, I just take pictures on how I make it and perhaps y'all can figure it out..

Whipping Cream

This is how the homemade cream suppose to look after 25 minutes of beating at high speed. It should look very creamy like the frosting texture.. You can actually buy Betty Crocker frost in replace of making this cream. Furthermore, the ingredients are not available in US except for the eggs!!.. *smile*

Eggwhites whipped

This is the beginning of making the batter. You need to beat the egg whites until it foaming creamy like the above picture.. Then you need to add the yolks and beat them until creamy. Afterwards, add the flour and the baking sodas and other ingredients... *shhhssshh* The secret ingredients not available in US either.. *hehhee*

Anyway, put all the liquid ingredients first then the dry ingredients.. I think its much easier that way.. Just need to lower the dial when beating the batter... Start from low to high then bring it down to medium then to low...

Anyway, enjoy the cake though.. Yummmsss!! Droool! Droool!!

Important Tips: Always wash you hands after handling eggs to avoid Salmonella.. *hehhee* unless you wanna get sick.. Then be my guess!!>> Don't wash those hands..

Swiss Roll Malay Style


Not quite right yet!! I decided to make this swiss roll yesterday. It was taught to me by my aunties while I was on my trip back home. However, I deviated from her instruction. Well, I didn't mean to deviate, but I forgotten to turn the cake over that it's sticky side is on the outside, which is a NO!! NO!!.. But it's delicious and yummy!! And the cream ... well, I was too impatient that I didn't wait till it cool, thus, it turns out okay I guess but not right!!

Anyway, I'll try it again this weekend. This time, I'll try to do it according to their instructions!! All of this were made from scratch including the cream too.. It's soo soo soft!!.. I'll put the recipe up perhaps later in the future, Insha Allah!!
