Korean Dessert: Injeolmi

I was so thrilled that I finally make this dessert successfully... The first time I made this dessert.. I failed.. I had to give it to my chickens... It was so crappy that am so afraid of making it again.. I couldn't figure out whats wrong with it as I follow the recipe to a "T"..

Today, I decided to try it again one more time, and the same thing happened. So I use my God-given brain to think of a way for it not to happen twice and it works!!!

Am so excited that I made a vlog of it!!



I reckon it must be the environment where I live, and the recipe originate from a Korean lady that lives in a different state so, I have to modify a little of the amount of water use and the time for microwaving it. I guess my microwave is too strong or something that I've to cut it from 3 mins to 2.5 minutes.

Anyway, it works and am eating it right now.. Definitely delicious!!!

If you can't succeed the first time, try and try and try again until you make a mess and succeed!!! Thats call determination.. oh YES!!!!

Chicken noodle soup

Since I've been under the weather for nearly a week now
with headcolds, sneezing, and echo in right ear which, led
me to partial deaf coz I can't hear properly..
I wish it pops.. :(

Anyway, I decided to make this chicken noodle soup
from the leftover chicken soup..

so far it seems to be working..
just needed more rest time I reckon..

Weekend Dinner


This was my dinner earlier..
It's paella.. It's suppose to be in yellowish color
but it sort of purplish because
I added a pinch of black rice..

Anyway, I used fish broth or daishi
which I made last night..
Since I've a few mussels left..
I decided to use them all so,
they won't clutter my freezer..

It was delicious..
I'll be packing this for lunch tomorrow..

Saturday Dinner..:Vegetarian

Weekend Dinner: Tomato Vege Soup

A simple dinner for me today..
I looked through my kitchen cabinet
and found a can of tomato soup..
So I decided to make Tomato Vege Soup


Here, I cooked my brown basmati rice with
the leftover of mexicorn!!

What's in the vege soup??
I cracked 3 eggs.. or rather I poached
the eggs!!

Then I fried some crackers..
Yea!! FRIED crackers..
which came from Singapore as apart of
the care package that mom sent me..


Yummmsss!!!..

Now, am off to eat my din din..

Sushi Balls..

Tonight is sushi night..
It's so simple to make sushi but,
people prefer to buy them then to make them.. lol

Now, let's learn to make this simple sushi..
Sushi filling need not be raw meat..
As I don't like to eat raw meat, my meat is
always cook or steam..
I thought of using the sashimi fish from the Japanese Market..
But the ingredients in it contains "Rice Wine" or "Sake"..
As I don't drink alcohol or Wine..
So I didn't buy the sashimi..

Ingredients:

1 1/2 cups Short grain rice (Nishiki or Calrose etc)
1 1/4 cup water
Vegetarian Japanese Rice Seasoning

Vinegar for rice shine:

3 tsbp Rice Vinegar
1/2 tsp salt
2 tbsp sugar

Filling:

Egg omelette (cut in strips)
cooked meat (here I use Turkey)
Scallions (cut into small pieces)

Equipments:

Cutting board as placemat


Methods:

1) Clean and Rinse the uncooked sushi rice 3xs or more until water turns clear and not muddy
2) Put it aside for 30 minutes. Drained.
3) Then cooked the rice using the rice cooker. Add the water to the rice.
4) 20 minutes into the rice cooking, add the rice seasoning and stir gently.

5) Make the vinegar: Add all the vinegar ingredients and stir gently.
Put in the microwave for 30 secs to 1 minute.

6) Once the rice cook, put it aside for 5 minutes.

Add the vinegar to the rice, fanning and folding the rice!!
7) If not using the rice, cover it with wet towel.

8) Take a seaweed and do as follows

Put rice first, then add the filling, lastly add the rice!
9) Press the rice using the mold lightly, and bring the mold out slowly.

Wella!!! Sushi rice ball is ready for folding.
10) Folded the seaweed gently.

It's ready to eat!

Now, eat the sushi with soy sauce or any kind of sauce.
Tonight, I ate this with turkey soup and cucumber sauce..

Simple Salad


If you have vegetables in the fridge for few days, and
you didn't know what to do with them..
Watch this clip to get ideas of what to do
with those veges.

Ingredients:

Pineapple (diced)
Cucumber (diced and throw away the seeds)
Sweet pepper or any pepper (diced)
Sprinkle some salt and pepper to taste

1 tbsp vinegarette (any type) or olive oil

Spicy Macaroni Stir-fry


This is my meal for tonight.. I needed some spice in me tonight... So I cooked this extra spicy macaroni-noodle ... Some of the ingredients that I could think of right now : it's meatless but it has scallops.. and veges.. Sorry my brain is not working tonight after I've tried umpteen times to make sure I could lift my feet for my crow pose... *lol*

Rojak

.. for dinner.. hmm.. I know it's weird.. Rojak is actually a snack food.. not dinner food.. But am too lazy to cook a meal so, I treat it like a dinner because thats the only food am eating tonight..


Equipments: Pots and frying pan

Ingredients:
pineapple (sliced thickly), cucumber (sliced thickly),
fried tofu, bean sprouts,
water spinach or some other green veges (optional),
fried tempeh (optional), jicama (sliced thickly), 

Sauce:
2 tbsp prawn paste, 1 tbsp tamarind paste or juice,
1 tbspsweet sauce, 1 cup roasted and chopped peanuts,
1/2 cup water (hot), 4 dried chillies (already soaked),
1/4 cup brown sugar or palm sugar

Methods:

All of the sauce ingredients need to be pounded or
you can use the food processor. Then add the hot water
and stir gently untill mixture are well blended.
You can use water, and then microwave the mixture
so that it is hot!!

Simple Stir-Fry

Today I decided to cook this simple stir-fry.. Lot of vegetables!!

Tofu, carrots, broccoli, shitake mushrooms
cauliflower, mustard greens,
boiled potatoes (quartered), and long beans..


Then I add cut-up skinless chicken marinated in kebab spices.. I used extra virgin olive oil here to cook this stir-fry and I also used Turkey broth plus vege broth..

Cook it for a few minutes... Accompanied food for this dish would be rice..

MOTN: Flavored Turkey Dinner

First, I marinated my Turkey overnight as shown below with spices and Almond milk. YES!! Almond milk... Well, you can use any kind of milk you like but I preferred Almond milk..

The next day: I transferred the marinated turkey into another crockpot liner. I laid celery at the bottom acting like a bridge and I scooped the broth that I made or the liquid from marinating the turkey about 1 cup into the crockpot liner as shown below.. Then I put the marinated turkey, rearranged them properly in the crockpot's line. I set the timer on high for an hour or two. Then I set the timer on low for 8 hours. Wella, the turkey is ready at the end of the day. It is indeed very very moist and flavorful!!

Now, the moment has come for me to reveal my dinner plate.. *drumroll*.. I wish I've a companion to eat this dinner with today.. Unfortunately, he's on the other side of the world.. :(

Dinner for me...


... It's a simple dinner.. Rice mixed with wild rice thats how I get the rice to be purplish in color.. Go figure!! lol.. Anyway, then I decided to make the Singapore Salad which is super easy!! Boiled eggs and sliced them using the slicer. Then sliced the cucumber and go buy yourself the ready-mix salad.. lol, and dump everything in a bowl and squeeze the heinz ketchup!!!


Afterthat, I decided to boil salted duck eggs, which tasted so delicious!! and yummy...


I've been eating so much lately, but the needle on my weighing machine is not moving.. instead, I've been losing weight.. Okay.. something is definitely wrong with me!!.. I'm not only eating too much during dinner.. I also snacking on chips and other cookies which I seldom munch on..

On top of that, am still under the weather regardless how much I've smile and laugh to get by the days.. lol

Spagetti Soup

What to do if you have leftover soup? Make it into spagetti soup!!! ... Yes, I had this chicken soup leftover today, no more meat in it, so I decided to add beef cubes and cooked the soup with the beef until the beef is tender. Once tender, I added more spices like the chilli paste to give it a little bit of hotness, and I added a dash of Mrs. Dash and black pepper, and two stalks of chard. I tear the chard and dumped it into the boiling soup.. Wella...


Isn't that look delicious??!! Sometimes, when you have leftovers at home, one has to decide to either throw it away or being creative and make it into something different, but taste really delish..


This was my dinner early today with sourdough bread that my bf bought a week ago. I refrigerated it, and it still good to be eaten today.. Slowly, most of the breads are about gone.. I also added taboule for dinner.. For cold days, it's good to eat hot soup.. :)

Tabouleh Salad

I kept looking at the balsamic vinegarette that my boyfriend bought for us, it's unopened yet. He asked me this question before he left for his flight: "Would you use this?"  He such a wonderful boyfriend that I could ever ask for..  I told him that I'll find something to do with it while he's gone.. I missed him..

So after looking at this bottle for a week unopened. I decided to go to the grocery store and bought a few vegetables to make tabouleh. The vegetables I bought: cucumber, parsley, red bell pepper, and tomatoes. Then I bought the wheat germ or bulgur (I think thats what it's called)

Anyway, tonight I made this tabouleh.. I reckon I already put up the recipe here.. The only different is that I use this Balsamic Vinegarette and fine grain kosher salt and organic primerose with flaxseed oil..

Here is the delicious tabouleh. I like my veges to be sliced and cut coarsely instead of fine. Some people prefer the veges to be finely cut.. It's up to you how you want to cut/sliced the veges.

Dinner Tonight


What to do if you have so many bread in the fridge.. I've normal bread, sourdough bread, and pita bread and wheat bread.. All of them I put in the fridge to make it last longer after their due date!!.. Why so many breads.. well, my boyfriend bought 2 different types of bread and I bought two different types too.. So it's like raining bread at home!!..

Anyway, slowly but surely the bread started to be gone.. I find a way to make the bread delicious to my taste... This was my dinner a few hours ago.. Pita bread with baked beans & salad.. Then I top it off with beef casserole.. yummmsss!!

I wish my boyfriend is here.. He would enjoy these meal.. and I won't be eating all alone.. :(

Anyway, the casserole was easy peezy to make.. The recipe for making the casserole is in my blog.. Just substitute the cream of mushroom with celery condensed soup and add uncooked ground beef. I didn't cook the beef because it will be cooked in the oven..

Well, it was very  very delicious!!! Yummms...

Use Vermicelli Noodle such as "Wei-Wei" brand or any other brand..
DO NOT use Rice noodles to make this because it will be very clumpy as rice noodles doesn't withstand high heat!!

Vegetable Fish Curry

This is my dinner dish for tonight. I'll be eating this curry with Basmati rice and cucumber sauce and not forgetting my homemade kimchi... Care for some?? ;)

Anyway, I cooked the curry separate from the fish. I marinated the fish with tandoori paste I bought at the Indian market yesterday!!.. Then I fried the fish for few minutes.. After that, I dished out the curry over the fried fish because I didn't like the smell of fish in my curry..
