Modified Mac & Cheese


Ingredients:

1 can cream of mushroom
1.5 cups of Almond Milk or any milk
2 tbsp unsalted butter
1 handful ground beef
1 shallot sliced thinly
1 small bell pepper diced
2 tbsp flour
2 cups of pasta
1 tbsp olive oil (for pasta)
salt and pepper to taste
2 cups cheese (try mix 3 different types of cheese)
(blue cheese, cheddar cheese, monterey jack)
(here I use cheddar and nigela cheese)
casserole dish or any oven proof dish
breadcrumbs

Breadcrumbs:

3 slices of bread (tear them)
fresh or package basil or parsley


Method:

1) Saute the beef with the sliced onions. Sprinkle peppers and salt to taste.



2) Boil the milk plus the cream of mushroom into a pot.
Stir them gently until it boils or almost boil.

3) Put the butter into another hot pot until it melted and add 2 tbsp of flour.
Stir gently until it becomes like a rue.


4) Add the boil milk into the rue and gently stir
to prevent clumping.

5) Let it boil or almost boil and stir gently for a few minutes.
Add cheeses into the milk mixture pot. Stir gently.

6) Add pasta and saute beef into the cooked milk mixture.



7) Pour the cooked mac and cheese into a casserole dish.
Top it with homemade breadcrumbs..


Oven: 375F
Timer: 15-20 minutes or until golden brown.

Weekend Dinner


This was my dinner earlier..
It's paella.. It's suppose to be in yellowish color
but it sort of purplish because
I added a pinch of black rice..

Anyway, I used fish broth or daishi
which I made last night..
Since I've a few mussels left..
I decided to use them all so,
they won't clutter my freezer..

It was delicious..
I'll be packing this for lunch tomorrow..

Cucumber Gyro Sauce

Ever enter a restaurant,
and wonder what sauce is that?
It's so delicious..
How do they make that?

I was at an Indian Restaurant last year
with my girlfriend...
We wonder what sauce it was
that tasted so delicious..
We could ask the chef but then..
we realized that it's cucumber sauce as
stated in the menu..

So I hunt for the recipe of it online..
I've tried several and tasted/tested several..
and I came out with this one..
a combination of all the recipe..

Indeed, a very very simple Gyro Cucumber Sauce..


Ingredients:

2 cups Plain Yogurt
1 jalapeno pepper (any color but I use green, unseeded)
a handful of cilantro (clean & rinse)
1 cucumber (peeled and unseeded)
1 lime (need the juice)
salt and pepper to taste
1 tbsp Olive oil

Methods:

1) Chopped the jalapeno pepper and cilantro using electric chopper
2) Dice 1/4 of the cucumber into small dice
3) Chopped the 3/4 of the cucumber
4) Mix all the above blended veges into the plain yogurt.
Gently stir them. Add salt and pepper to taste
5) Add olive oil into the mixture and stir gently
6) Squeeze the lime and stir the mixture
7) Let it sat for 30 minutes in the fridge

Now, it's done..
 You can taste it and eat it with your salad..

Snacks and foodilicious...

Here are a few snacks that I like to have around the house.. besides my cookie jar.. YES!! I do have a cookie jar filled with vanilla cremes cookies..

Whenever, I go out to the grocery stores, these are the snacks I looked for in the aisle..


I like to spread this cheese on my bread before it's being toast for snacking or
breakfast or just to pack it for lunch


I love this mini pita bread from FatherSam's. I saw this at The Fresh Market
at one location which was further from my home.. but
it's not available at another Fresh Market.. isn't that odd!!
I wish they have it in all of the Fresh Market..

Anyway, I would definitely go out to that store again to buy this minis.. they are so soft and delished!!

Am loving this pancake.. Mix it with this almond milk and tossed
chopped almonds.. yummms!!

Recipe:
2 cup pancake
2 eggs
1 cup milk or 1 and half cup
handful of almonds
1 tbsp oil

Stir well and leave it for about 5 minutes before using
the batter.. and wella!!


Honey buckwheat pancake!!!

Another is this almond chocolate that I totally love!! It was first introduced to me by my bf.. He bought it for me from Japan I reckon.. and he gave it to me when we first met!! I totally love it!! Been craving for it for days and finally, I saw it at the Asian market.. Awesome!!

I totally recommend this chocolate for those
choco lovers!!!

Mini Pot-pie


I decided to turn leftover cream soup into mini potpie for me. I like to turn most leftover into something interesting that I can eat rather than throwing them away if they have not turn bad yet. I bought the mini pot pie pans from Harris Teteer, and decided that I could make the potpie for lunch tomorrow to bring to work.

What I did to the leftover? I added beef to the cream soup so that my pie has that meaty taste and would taste like a pie rather than plain soup.. lol

Dinner for me...


... It's a simple dinner.. Rice mixed with wild rice thats how I get the rice to be purplish in color.. Go figure!! lol.. Anyway, then I decided to make the Singapore Salad which is super easy!! Boiled eggs and sliced them using the slicer. Then sliced the cucumber and go buy yourself the ready-mix salad.. lol, and dump everything in a bowl and squeeze the heinz ketchup!!!


Afterthat, I decided to boil salted duck eggs, which tasted so delicious!! and yummy...


I've been eating so much lately, but the needle on my weighing machine is not moving.. instead, I've been losing weight.. Okay.. something is definitely wrong with me!!.. I'm not only eating too much during dinner.. I also snacking on chips and other cookies which I seldom munch on..

On top of that, am still under the weather regardless how much I've smile and laugh to get by the days.. lol

Muffin Pancake

Today, I decided to use up all the bananas that already too ripe.. I made muffin pancake!!!

Muffin Pancakes


Ingredients:

2 cups Bisquick
1 cup evaporated milk or 2 small cans of evaporated milk
2 eggs
2 super ripe bananas (mashed)

muffin pan

Oven: 375F for 20 minutes

Muffin Batter


Method:

1) Add all the ingredients into a bowl.
2) Stir until the ingredients are well blended.
3) Set it aside for a few minutes or 30 minutes, and stir again..

Then spoon into the pan!!

Paella for Lunch


Had this for lunch again.. It's leftover from Saturday lunch.. It's so delish.. Am using the new wok that I bought from the Korean store.. Wow!! It really cooked evenly and better than my old wok I bought from Walmart..
