Snacks and foodilicious...

Here are a few snacks that I like to have around the house.. besides my cookie jar.. YES!! I do have a cookie jar filled with vanilla cremes cookies..

Whenever, I go out to the grocery stores, these are the snacks I looked for in the aisle..

I like to spread this cheese on my bread before it's being toast for snacking or
breakfast or just to pack it for lunch

I love this mini pita bread from FatherSam's. I saw this at The Fresh Market
at one location which was further from my home.. but
it's not available at another Fresh Market.. isn't that odd!!
I wish they have it in all of the Fresh Market..

Anyway, I would definitely go out to that store again to buy this minis.. they are so soft and delished!!

Am loving this pancake.. Mix it with this almond milk and tossed
chopped almonds.. yummms!!

Recipe:
2 cup pancake
2 eggs
1 cup milk or 1 and half cup
handful of almonds
1 tbsp oil

Stir well and leave it for about 5 minutes before using
the batter.. and wella!!

Honey buckwheat pancake!!!

Another is this almond chocolate that I totally love!! It was first introduced to me by my bf.. He bought it for me from Japan I reckon.. and he gave it to me when we first met!! I totally love it!! Been craving for it for days and finally, I saw it at the Asian market.. Awesome!!

MOTN: Quinoa & salad

I'd a long day today...
Anyway, as am too exhausted, I decided to cook quinoa.. which is an easy cheezy.. unlike cooking rice.. quinoa only takes like 6 minutes to cook..

How to cook quinoa?
--> 1 cup of quinoa = 2 cups water...

Thats the only thing you need to know and cook it for 5 minutes until the grains are fluffy!!

Quinoa comes in two color:
here, I mix both colors (inca red and inca normal). I think they do have black ones too..

I like my food to be colorful.. Somehow, if my food is not colorful and interesting.. I kind of not interested in eating.. hence, my food has to be colorful.. ;)

Then I saw this salad (bleow) while I was at Walmart a few days ago.. They look so awesome and fresh that I decided to give it a try.. Indeed, they are fresh salad.. At the same time, I bought a bunch of mixed-red roses.. I love roses.. *wink wink*.. and the person who bought that pink roses at the corner too.. Love it!!

Anyway, enjoy!! and have a spiffy night!!..

Dinner for me...

... It's a simple dinner.. Rice mixed with wild rice thats how I get the rice to be purplish in color.. Go figure!! lol.. Anyway, then I decided to make the Singapore Salad which is super easy!! Boiled eggs and sliced them using the slicer. Then sliced the cucumber and go buy yourself the ready-mix salad.. lol, and dump everything in a bowl and squeeze the heinz ketchup!!!

Afterthat, I decided to boil salted duck eggs, which tasted so delicious!! and yummy...

I've been eating so much lately, but the needle on my weighing machine is not moving.. instead, I've been losing weight.. Okay.. something is definitely wrong with me!!.. I'm not only eating too much during dinner.. I also snacking on chips and other cookies which I seldom munch on..

On top of that, am still under the weather regardless how much I've smile and laugh to get by the days.. lol

If you're under the weather...

I've been under the weather for the past few days, I woke up with very sore throat and my whole body aches.. This is the time when I wish for someone.. Anyway, today I decided to go to WF Market  to get spinach but they are out of it. So, I got me green kale. Well, they do have spinach which was in the box, but am not so keen of spinach in the box today..

Then I got these meds for my sore throat and hopefully, it would help to ease the soreness of my throat early morning... I reckon it's winter's cold.. change of season my immune system tend to go a little bit off..

Got home.. I started to prep for my soup: Vegetable Beef soup...

Ingredients:

2 stalks Green Kale (coarsely cut)
handful shitake mushrooms (fresh & cut coarsely)
2 brussels sprouts (diced)
1/4  Red bellpepper (diced)
onions & garlic (chopped & sliced)
2 tbsp chilli paste
1 tsp ginger powder or fresh ginger
cooked beef (cut into cubes)
1 vegetable broth cubes
Salt & pepper to taste

Rice Vermicelli Noodles (Elephant brand & Wei-wei brand) (soak in hot water for 1 minute)

Vegetable Beef Noodle Soup
As per normal cooking on the soup, saute the onions, ginger, chilli paste in the wok for one minute. Add salt and pepper to taste. Then add the water from the mushroom and pour the beef into the wok. Cooked for a few minutes or until the beef is tender.

Once tender, add the rest of the vegetables into the wok. Let it cook for a few minutes until the veges are tender and blanch.. Then you're ready to serve it with rice or noodles.. Today, I served mine with noodles because I just need it for am coming down with cold.

As am not feeling well, I like to watch my bunnies.. as they like to entertain me with their muse last night.. Aren't they adorable sitting in their litter box together.. very cozy indeed...!!! :D

Made in Korea: Pot & Wok

Today, I decided to evaluate the condition of my pots and woks at home.. I decided to get rid of my old pots and woks as they have been too long and started to rust...

So I decided to buy the new pot and wok above from the Korean store. They are made in Korea. I prefer my cookware especially the pot and wok made in Korea because they are of high quality compared to the ones sell at Walmart etc..

They also heat evenly and cook well.. and they are made of ceramic base and no teflon!!! Wuhooo!!

Furthermore, they are not as costly as some cookwares.. This cost me less than 30 bucks with 10% discount ..
They are very colorful too aesthetically... They are made by neoflam.. so if y'all are interested to know .. you can just google it..

I like the wok.. it's 30 cm in diameter and big enough to replace my old wok.. which the teflon coat about to strip..

Anyway, I've not use these cookwares yet.. but I've used another korean cookware before and I still have and still using them... They are awesome..

If you want to try an inexpensive cookwares with high quality .. try the Japanese or Korean cookwares.. Happy cooking!!

Battling Vertigo..

Not many knows that I suffered from Vertigo.. I didn't know it myself until recently.. I've vertigo since I was young.. It hits me in my mid-teens.. What is vertigo? It's a headache simply put but not simply a headache.. when you start having dizziness, spinning of the floor and rooms and your surroundings, and nausea and vomit and your body just ache and your movement are out of balance.. How long does it last? Depends.. Personally, it took me 24 hours to really get my balance and bearings in the right order..

I'm prone to accident either small or big ones.. since I was very young.. I fell from a high bench and hit my head on the ground.. and had a concussion in a truck accident.. sometimes.. I couldn't hear what others said because my ear started to rings.. Yes, I do have ringing ears where I could hear echoes of what others are saying.. and I tend to try to understand by looking at the facial or lips of the persons when they started to talk thats when I couldn't hear.. Am I deaf? NO! Am not deaf but am partial deaf when the ringings starts.. and when people started to shout and yelled at me.. I couldn't hear them.. thats why my late husband and family didn't yell when am around coz I couldn't hear what they are saying..

When I have vertigo.. a bad one.. I normally try to focus on one thing, and I've to do things in slow motion.. meaning walking slow, talking slow, doing things slow.. and I couldn't lay down to sleep like normal.. I've to sit up for a few hours to get my brain, head and legs and others to be in coordination and balance... Once I get my balance, I try to do other things slowly.. I don't drive when I've vertigo.. I'll put ointments, patches and other medicines.. There're no medicines for vertigo.. I learnt to control and live with it for more than 10 years or so.. Sometimes, I cried hoping that it would go away as fast as it came.. that doesn't work.. When one has vertigo, one need to relax to gain balance.. one cannot be stressed out.. Very important.. relax and stay calm and put ointments: tiger balm on forehead, neck and nose to prevent from fainting..
It's NOT FUN to have vertigo, but I adapt to it..

Anyway, what do I cook to make sure that I regain my health back from Vertigo.. I make chicken soup and porridge (Rice) as shown below.. It's easy.. and I ate half boil eggs.. Enjoy!! Hopefully, you don't suffered from vertigo.. not a fun illness to have...

Coconut Oil

Coconut oil

I went to WholeFoods today, and I decided to buy this coconut oil. I heard so much about the benefits of this oil, so I decided to buy it. I do have coconut oil for the hair, which I never use and I should be using it..

Anyway, one of the benefits of coconut oil is that it helps to heal ezcema and other skin problems, hair problems.. etc.. It's not that yakky though when I took a gulp of 1 tablespoon of coconut oil after I open it. I thought it gonna be so yakky, but inretrospect it wasn't. It tasted great!! I guess it depends on what brand of coconut oil one bought.

And, I also use it to fry my mackeral fish.. It smells so good.. my fish didn't smell fishy either.. Awesome!!! If you are interested, just try this oil!!..

Any questions, just penned them down in the comment box!! Thank you for reading.. and have a great weekends everybody!!

Package from Mom

Yippeee!!! This was in my mail today!! I love opening package from my mom.. It's like a present to me... I love it!!! and I love my mom too.. for sending this package to me.. One thing I love about my family back home.. they never force me to do anything that I don't want to do, and they never matchmake me with anyone since my husband passed away.. I appreciate the things they have done for me and for being understanding too and for loving me in their own way.. *hugs*

I am happy by myself at this moment. Loneliness strikes me once awhile but thats inevitable in every man's/woman's life.. To all my friends.. please don't try to matchmake me because it gets very annoying at times.. Although I didn't really say it outloud.. All you can do.. just be a friend.. it would meant a whole lot more than anything else...

Anyway, I've divert from the topic.. now, thank you mom for sending this package.. I'm going to use the ointments right away!!!
