Cucumber Gyro Sauce

Ever enter a restaurant,
and wonder what sauce is that?
It's so delicious..
How do they make that?

I was at an Indian Restaurant last year
with my girlfriend...
We wonder what sauce it was
that tasted so delicious..
We could ask the chef but then..
we realized that it's cucumber sauce as
stated in the menu..

So I hunt for the recipe of it online..
I've tried several and tasted/tested several..
and I came out with this one..
a combination of all the recipe..

Indeed, a very very simple Gyro Cucumber Sauce..


Ingredients:

2 cups Plain Yogurt
1 jalapeno pepper (any color but I use green, unseeded)
a handful of cilantro (clean & rinse)
1 cucumber (peeled and unseeded)
1 lime (need the juice)
salt and pepper to taste
1 tbsp Olive oil

Methods:

1) Chopped the jalapeno pepper and cilantro using electric chopper
2) Dice 1/4 of the cucumber into small dice
3) Chopped the 3/4 of the cucumber
4) Mix all the above blended veges into the plain yogurt.
Gently stir them. Add salt and pepper to taste
5) Add olive oil into the mixture and stir gently
6) Squeeze the lime and stir the mixture
7) Let it sat for 30 minutes in the fridge

Now, it's done..
 You can taste it and eat it with your salad..

Baked Salmon..

This is an easy fish dinner I made
a few days ago.. (can't remember the date)


Oven: 400F
Time: 30 minutes (covered)

Ingredients:

celery flower
onions
brussel sprouts (optional)
1 tsbp of salad mix (see recipe here)

marinate sauce:

Balsamic Vinegarette
Honey d'jon mustard vinegarette
Kraft Honey style

Can use any kind of vinegarette or salad dressings for marinate.
It just so happened that I have all these dressings in my fridge

Simple Salad


If you have vegetables in the fridge for few days, and
you didn't know what to do with them..
Watch this clip to get ideas of what to do
with those veges.

Ingredients:

Pineapple (diced)
Cucumber (diced and throw away the seeds)
Sweet pepper or any pepper (diced)
Sprinkle some salt and pepper to taste

1 tbsp vinegarette (any type) or olive oil

Spicy Macaroni Stir-fry


This is my meal for tonight.. I needed some spice in me tonight... So I cooked this extra spicy macaroni-noodle ... Some of the ingredients that I could think of right now : it's meatless but it has scallops.. and veges.. Sorry my brain is not working tonight after I've tried umpteen times to make sure I could lift my feet for my crow pose... *lol*

Rojak

.. for dinner.. hmm.. I know it's weird.. Rojak is actually a snack food.. not dinner food.. But am too lazy to cook a meal so, I treat it like a dinner because thats the only food am eating tonight..


Equipments: Pots and frying pan

Ingredients:
pineapple (sliced thickly), cucumber (sliced thickly),
fried tofu, bean sprouts,
water spinach or some other green veges (optional),
fried tempeh (optional), jicama (sliced thickly), 

Sauce:
2 tbsp prawn paste, 1 tbsp tamarind paste or juice,
1 tbspsweet sauce, 1 cup roasted and chopped peanuts,
1/2 cup water (hot), 4 dried chillies (already soaked),
1/4 cup brown sugar or palm sugar

Methods:

All of the sauce ingredients need to be pounded or
you can use the food processor. Then add the hot water
and stir gently untill mixture are well blended.
You can use water, and then microwave the mixture
so that it is hot!!

Then pour some of the sauce onto the raw veges.. and EAT!!

Blackberry-Date Cornmeal Cake

.. hmm .. yummmssss.. Blackberry.. sound like that smartphone Blackberry..., but this one.. I can sure eat it!!

Anyway, the recipe is adapted from bon appetit by Huckleberry Bakery and Cafe.., so I don't think am going to rewrite the recipe here although I modify some of the ingredients to fit my taste and what is available in my kitchen cabinet and the fridge. If you have any question, please don't hesitate to leave a message... ;)


My Baking Timer: 1 hour
Cooling Timer: 10 minutes

This cake is great for morning breakfast or as a coffee cake.. Enjoy!! Hope you try the recipe.. and be creative.. because cooking and baking are an art.. so art not always perfect...

Simple Stir-Fry

Today I decided to cook this simple stir-fry.. Lot of vegetables!!

Tofu, carrots, broccoli, shitake mushrooms
cauliflower, mustard greens,
boiled potatoes (quartered), and long beans..


Then I add cut-up skinless chicken marinated in kebab spices.. I used extra virgin olive oil here to cook this stir-fry and I also used Turkey broth plus vege broth..

Cook it for a few minutes... Accompanied food for this dish would be rice..

MOTN: Quinoa & salad

I'd a long day today... 
Anyway, as am too exhausted, I decided to cook quinoa.. which is an easy cheezy.. unlike cooking rice.. quinoa only takes like 6 minutes to cook..


How to cook quinoa?
--> 1 cup of quinoa = 2 cups water...

Thats the only thing you need to know and cook it for 5 minutes until the grains are fluffy!!

Quinoa comes in two color:
here, I mix both colors (inca red and inca normal). I think they do have black ones too..

I like my food to be colorful.. Somehow, if my food is not colorful and interesting.. I kind of not interested in eating.. hence, my food has to be colorful.. ;)

Then I saw this salad (bleow) while I was at Walmart a few days ago.. They look so awesome and fresh that I decided to give it a try.. Indeed, they are fresh salad.. At the same time, I bought a bunch of mixed-red roses.. I love roses.. *wink wink*.. and the person who bought that pink roses at the corner too.. Love it!!

Tabouleh Salad

I kept looking at the balsamic vinegarette that my boyfriend bought for us, it's unopened yet. He asked me this question before he left for his flight: "Would you use this?"  He such a wonderful boyfriend that I could ever ask for..  I told him that I'll find something to do with it while he's gone.. I missed him..

So after looking at this bottle for a week unopened. I decided to go to the grocery store and bought a few vegetables to make tabouleh. The vegetables I bought: cucumber, parsley, red bell pepper, and tomatoes. Then I bought the wheat germ or bulgur (I think thats what it's called)

Anyway, tonight I made this tabouleh.. I reckon I already put up the recipe here.. The only different is that I use this Balsamic Vinegarette and fine grain kosher salt and organic primerose with flaxseed oil..

Here is the delicious tabouleh. I like my veges to be sliced and cut coarsely instead of fine. Some people prefer the veges to be finely cut.. It's up to you how you want to cut/sliced the veges.

Dinner Tonight


What to do if you have so many bread in the fridge.. I've normal bread, sourdough bread, and pita bread and wheat bread.. All of them I put in the fridge to make it last longer after their due date!!.. Why so many breads.. well, my boyfriend bought 2 different types of bread and I bought two different types too.. So it's like raining bread at home!!..

Anyway, slowly but surely the bread started to be gone.. I find a way to make the bread delicious to my taste... This was my dinner a few hours ago.. Pita bread with baked beans & salad.. Then I top it off with beef casserole.. yummmsss!!

I wish my boyfriend is here.. He would enjoy these meal.. and I won't be eating all alone.. :(

Anyway, the casserole was easy peezy to make.. The recipe for making the casserole is in my blog.. Just substitute the cream of mushroom with celery condensed soup and add uncooked ground beef. I didn't cook the beef because it will be cooked in the oven..

Well, it was very  very delicious!!! Yummms...

Vegetable Fish Curry

This is my dinner dish for tonight. I'll be eating this curry with Basmati rice and cucumber sauce and not forgetting my homemade kimchi... Care for some?? ;)

Anyway, I cooked the curry separate from the fish. I marinated the fish with tandoori paste I bought at the Indian market yesterday!!.. Then I fried the fish for few minutes.. After that, I dished out the curry over the fried fish because I didn't like the smell of fish in my curry..

Want to try this? Quinoas!!!

Quinoas

This was my meal the other night in replace of rice. It's easy to make and needs only 5 to 10 minutes to be ready. You can add spices to taste or meat or anything. You can even made this into a fried rice in replace of the actual rice!!! You can find this at wholefoods or any health food stores.

How to cook this? 1 cup of quinoa to 2 cups of water.
If you are a single eater and eats once a day. This can last for 2 days.

It's healthy, and it's grain food full of protein. It's gluten-free and wheat-free too. So if you are allergic to wheat and gluten, this is the right grain food for you.




On top of that, if you want to loose those weight, try this in place of rice. It's light and not heavy. It definitely won't make you crave for more food. It's good for the skin too.
