Ingredients:
Dried Bean Sheets (Soak for a few minutes)
3 eggs
some Cilantro
Chopped Onions or shallots
1 tsp Chilli paste or chopped fresh chillies
1 tsp minced garlic
Salt & Pepper to taste
Vegetable cube stock
Tomatoes (quarter)
Vegetable Oil (for sauteing)
2 cups water or more
Methods:
- Saute onions, garlic, chilli, vegetable cube stock, and add the salt and pepper to taste. Saute for a few seconds.
- Add 1 cup water and gradually increase if needed. Then poach the eggs.
- Then add tomatoes and cook for a seconds.
- Add the soak dried bean sheets into the pot. And add more water if needed.
- Finally, taste the soup. If needed add more salt and pepper. Then pluck some cilantro and sprinkled into the soup.
