Too many Tomatoes.. Make Taboule

I have too many tomatoes!! What do I have to do with them?? They are perishables!! Well, I decided to make Taboule, mediterranean salad!! Bewarned! This salad is slightly bitter because of all fresh vegetables. If you decide to detox your whole body internally, I would recommend homemade Taboule like such!!

Ingredients:

6 or 8 tomatoes (unseeded, diced)
1 cucumber (unseeded, diced)
1 small size bell pepper (red color is recommended, diced, unseeded)
1 jalapeno pepper (unseeded, diced)
1 tbsp bulgur or Near East Tabouleh (soak in warm water for 1 hr)
1 whole bunch of parsley (cleaned and chopped)
1 tbsp lemon or lime juice
1 tbsp Hemp seed (optional)
1 tbsp salt to taste (you can sprinkle this gradually to taste)
1 small shallot (diced)
1 tbsp Hemp Oil or Olive Oil

Methods:
  1. Unseeded and cleaned all the vegetables and diced them in small pieces not too coarse.
  2. Pile all the vegetables into a bowl and gently folded them so that the veges are all mix and happy being together!!... lol
  3. Add the chopped parsley. Make sure that you don't overchopped the parsley!!
  4. Pour the lime or lemon juice. Mix the mixture gently!
  5. Sprinkle the oil and mix the veges gently.
  6. Then add the soaked bulgur. Personally, I use the "Near East" ready mix Taboule, but u still need to soak the wheat. You can find this at specialty stores or at the mediterranean stores or at Harris Teeter or sometimes at Food Lion.
  7. Mix all the veges until they are all HAPPY!!
  8. Finally, add salt to taste!
If your taboule is very bitter, add more salt until it's saltish enough to your taste and it doesn't taste too bitter, but not too saltish!! If you like it without the salt, that is fine too, but bewarn, it's very bitter due to the parsley.
