Upside Down Chicken Rice



Ingredients

Chicken drumsticks/wings/etc
3 cups Briani rice
3 cups chicken broth
salt & pepper to taste
1 cucumber

Equipment: Rice cooker

Methods:
  1. Scoop 3 cups of briani rice into a bowl and set aside.
  2. Thaw the chicken and sprinkle salt and pepper to taste.
  3. Put the chicken into a pot and pour water until it covers the chicken. Then sprinkle salt and pepper to taste. Let the water-chicken boil for 30 minutes or until cooked.
  4. Wash and clean the rice 3xs at least.
  5. Sprinkle salt into the rice to taste.
  6. Drain the chicken broth from the water-chicken mixture into a measuring cup. Measure it up to 3 cups. Set it aside.
  7. Heat oil in a pan and fry the boiled chicken until it slightly brown.
  8. Spray oil in the rice cooker pot and arranged the fried chicken into the pot.
  9. Then add the cleaned rice onto the chicken in the rice cooker pot.
  10. Pour the broth into the rice cooker. Let it cook automatically.
  11. Serve the cooked chicken rice with sliced cucumber and 'mae ploy' chilli ketchup.
